For some people, eating healthy in winter is a real challenge. We just crave warm, comforting foods! This creamy broccoli potato soup is the perfect solution. It’s easy to make, incredibly satisfying, and actually good for you.
It makes enough for 5–6 people and comes together quickly, especially if you have a Bellini (or Thermomix) to do the chopping and stirring for you!
4 medium potatoes, peeled
4 cups almond milk
1 brown onion
2–3 cloves garlic
1 avocado
⅓ cup green onions (shallots), chopped
2 cups frozen broccoli
2 Tbsp vegetable stock paste (homemade is best)
Pepper, to taste
I love using my Bellini kitchen machine for this — it makes healthy cooking so much easier and faster!
Chop and sauté the onion and garlic. (In the Bellini: 4 seconds on speed 6, then sauté.)
Add the peeled potatoes, almond milk, and vegetable stock paste. Bring to a gentle boil while stirring regularly. (In the Bellini: Set for 25 minutes at 100°C on speed 2.)
After about 10 minutes, add the avocado and chopped green onions while the soup continues to stir.
If you prefer a thinner consistency, add a little extra water or almond milk until it reaches your desired thickness.
Season with pepper to taste.
Serve hot and enjoy this nourishing, comforting bowl of soup!
